What is Hot Giardiniera?

Hot Giardiniera is a spicy pepper mixture from Italy that’s been made famous in Chicago specifically on Italian Beef sandwiches at places like Portillo’s, Al’s Beef, and Johnnie’s Beef. Ours is a mixture of pickled serrano peppers, celery, bell peppers, and pitted green olives and preserved in soybean oil for at least 30 days. It certainly has some heat to it and makes everything better, just like bacon!

Is your thin crust a cracker-like crust commonly used in Chicago?

Yes, it certainly is and we also add cornmeal to it as well when making it each day to enhance the flavor. Crunchy on the outside and soft on the inside. While Deep-Dish is what Chicago is known for, most Chicagoans actually prefer thin crust believe it or not! We offer both so you have the best of both worlds and in case you have a moody appetite!

Are your meatballs beef or pork?

Both! We make our meatballs in-house with a mixture of fresh ground beef and sausage along with Romano cheese, Italian seasonings, salt, black pepper, Italian bread crumbs, garlic, and eggs.

Do you have sound on during games you show on your tv’s?

We always try to show games all day/night, but don’t always have the sound on. We play music for regular season games, however we will have sound on for the big games, most notably postseason games. We want to have a sports bar vibe in the front-of-the-house to go along with our pizza/beers/wine. We want to be different than the average pizza joint!

Are your Grinders sandwiches like the ones back east?

Ours are our own creation but very similar depending where you’re from. We serve ours on a toasted French soft roll and pack them with meats, cheese, and sauce. Our Meatball Grinder will change your life!

What are the most popular California Thin Crust pizzas?

The most popular ones are Buffalo Chicken, Luau, and Supreme. If you’re a vegetarian though, we highly recommend The Goat!

What are the most popular Chicago Pan Crust pizzas?

The Geno, named after my dad who’s got a big appetite for meats and anything spicy!

What are the most popular Grinders sandwiches?

Meatball, Buffalo Chicken, and Muffaletta. We sell 3 times as many Meatball Grinders as any other sandwich. Quite possibly one of, if not the best, Meatball sandwich in town! Working on perfecting a Swedish Meatball Grinder next, stay tuned!

What cheeses are in your Mac & Cheese?

I love Mac & Cheese and when I think about it and eat it, I feel like a kid again! Ours is a flashback to being young with a dash of adulthood. The flashback being Velveeta for its creamy texture/consistency and Crumbled Bleu Cheese playing the part of adulthood. We then add a bit of mozzarella to bring the two big flavor cheeses together. Highly recommend adding bacon or hot giardiniera to your Mac & Cheese!

Do you offer a gluten-free crust?

We do and they’re spectacular! However we do want to caution anyone who does order gluten-free crust that it’s made in an environment that also contains gluten products, most notably flour. If you are extremely intolerant to gluten, we advise against it as you just can’t be too careful!

Do you offer Vegan cheese?

We do and we use the best brand ever, Daiya! It’s creamy like regular mozzarella so it’s great for pizzas!

Do you charge extra for Vegan cheese or Gluten Free crust?

No, absolutely not! Those two items do cost a lot more than their counterparts and that’s why most pizza places charge extra for them but we couldn’t imagine charging someone for having a dietary restriction. Say what?!

Do you sell slices?

No, we don’t! To us, slices are like leftovers and we don’t believe in selling leftovers. Our pies don’t take long to make so just order a small pie yourself and enjoy it fresh instead of 2-3 hours old and re-heated like at pizza-by-the-slice places!
